Pulled Pork Ravioli

Locally sourced pork shoulder marinated for 12 hours in pimenton, cumin, honey and olive oil then slow roasted overnight at 75°C until the meat is tender and falling off the bone. The meat is then shredded and mix with a sweet fine diced vegetable mirepoix and sauteed with a rich tomato paste and white wine reduction.

The juicy and aromatic mixture is then rolled inside our housemade ravioli pasta sheets and cooked to order; served with fresh herbs, crispy fried onion and a white wine and butter sauce.
