Calamari speaks for itself as a favourite for most in the seafood department.

Serving a dish which allows the Calamari to stand out but still be accompanied by interesting and traditional flavours is the key to enjoyment. Preparation of fresh Calamari is paramount so we buy the fish whole and prepare everything in house with the highest attention to detail.

It is important to cook calamari really fast on high heat to showcase the tender fishes delicate flavour and texture.

We add the the lightly scored seafood to a hot dry pan coated in olive oil and seasoning frying the calamari until it is just cooked. Finishing the dish with a little diced chilli, garlic, white wine, kalamata olives, semi dried tomatoes with lemon juice and butter to finish.
